Homemade Elderberry Syrup

Servings: 750 ml Bottle

Ingredients

  • 4 Cup Filtered Water
  • 1 Cup Elderberries (I used dried)
  • 2 Tbsp Ginger Powder (Or fresh root)
  • 2 tsp Cinnamon
  • ½ tsp Cloves (Or ground)
  • 1 piece Anise Star (Optional)
  • 1 Cup Honey (Save to the side until the end)

Instructions

  • Add all the ingredients to a stock pot.
  • Bring to a simmer for 45 minutes to an hour, stirring occasionally.
  • Let cool for 15 minutes before adding the honey.
  • Whisk in honey until dissolved.
  • Strain into a bowl and pour into glass vessel of your choice.
  • Store in fridge up to a month or keep on the counter for quick consumption.

Homemade Rhubarb Blueberry Jam

Servings: 9 Half-Pint Jars

Ingredients

  • 4 Cups Rhubarb
  • 4 Cups Blueberries
  • 1 Zest Of 1 Whole Lemon
  • 1 Juice Of 1 Whole Lemon
  • 5 Cups Sugar
  • 3 Tbsp Classic Pectin

Instructions

  • Shred up rhubarb (in food processor) for easier cooking.
  • Add rhubarb to pot.
  • Add blueberries to pot
  • Cook them down for 20 minutes until rhubarb starts to turn blueberry color.
  • Take off stove and put into food processor to blend up until consistency you wish.
  • Return to pot, add sugar and stir.
  • Add pectin and stir.
  • Cook together for about 25 minutes until everything is dissolved.

Notes

Follow Steam Canning Protocol:
-Warm up jars
-Put warm product in jars leaving 1/4 inch head space
-Bubble pop inside jars
-Wipe rim clean
-Place Lids and rings finger tight
-Place back on steam canner
-Bring up to temperature for your elevation
-Steam can for 10 minutes
-Remove from heat and let sit for 24 hours before moving

Homemade "Cream of..." Dry Mix

Servings: 3 Cans Worth

Ingredients

  • ½ Cup Powdered Milk
  • 6 Tbsp Arrowroot Powder or Tapioca Starch
  • 2 Tbsp Dried Onion
  • 5 Bouillon Cubes Or 5 Tbsp of Bouillon Cube Mix *See My Video
  • ½ tsp Black Pepper
  • ½ tsp Parsley
  • ½ tsp Basil

Instructions

  • Add all the ingredients to a jar.
  • Stir, shake and swirl until well combined.

Notes

 
1 Can = 1/3 C of Mix + 1 1/4 C of Water or Milk

Homemade Bouillon Cube Mix

Ingredients

  • 1 Cup Nutritional Yeast
  • 2 Tbsp Salt (More or less to taste)
  • 2 Tbsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 Tbsp Dried Parsley
  • 1 tsp Dried Basil
  • ½ tsp Celery Seed
  • 1 tsp Ground Turmeric (Optional)

Instructions

  • 1 tsp = 1 Cube
  • Mix all ingredients together in a jar and give it a shake.
  • Keep in airtight container up to a year.

Homemade Ketchup Only 7 Ingredients

Servings: 1 Pint

Ingredients

  • 2 6 oz Cans Tomato Paste
  • ¼ Cup Filtered Water
  • ½ Cup Apple Cider Vinegar (Can use regular Vinegar)
  • ¼ Cup Maple Syrup
  • ½ tsp Salt
  • ¼ tsp Garlic Powder
  • ¼ tsp Onion Powder

Instructions

  • Mix all ingredients over medium heat in thicker bottomed pot as to not burn or scorch liquid.
  • Stir occasionally as to not burn or stick to the bottom.
  • Simmer 10 minutes.
  • Turn off heat and let cool 10-15 minutes.
  • Put in jar of your choice and refrigerate up to 3 weeks.

Jerky Marinade for 1.5 Lbs of Meat

Ingredients

  • Cup Soy Sauce (Or Liquid Aminos)
  • Cup Worcestershire Sauce
  • 4 Dashes Liquid Smoke (I used Hickory)
  • ¼ tsp Pepper
  • tsp Salt
  • ½ tsp Onion Powder
  • ¼ tsp Ground Mustard
  • tsp Paprika
  • 1 Tbsp Maple Syrup or Honey (Optional)
  • tsp Red Pepper Flakes (Optional if you want less heat)
  • ¼ tsp Ground Ginger (Optional)
  • ¼ tsp Ground Turmeric (Optional)

Instructions

  • Mix wet ingredients first.
  • Add dry ingredients and mix well until there are no clumps.
  • Add meat.
  • Cover and marinate overnight.

Homemade Zucchini Relish

Servings: 6 Half-Pint Jars

Ingredients

  • 4 Cups Shredded Zucchini
  • 4 Cups Chopped Peppers & Onion Mix

Brine:

  • 1 Cup Apple Cider Vinegar
  • 1 Cup White Vinegar
  • ¾ Cup Raw Honey
  • ¼ Cup Salt
  • 1 Tbsp Celery Seed
  • 1 Tbsp Mustard Seed
  • 1 Tbsp Coriander

Instructions

  • Combine zucchini and pepper/onion mix.
  • Add 1/4 c salt and let sit for at least 5 hours/May sit overnight.
  • Strain vegetables and set aside.
  • Mix brine ingredients in large saucepan and bring to a rolling boil.
  • Add vegetables and simmer for 10 minutes, stirring well.
  • *May water bath can or steam can as shown in video.

Jerky Marinade for 1 Lb of Meat

Ingredients

  • ¼ Cup Soy Sauce (Or Liquid Aminos)
  • 2 Tbsp Red Wine Vinegar
  • 2 Tbsp Honey (Or Maple Syrup)
  • 1 tsp Worcestershire Sauce
  • 1 tsp Chili Garlic Sauce
  • 1 tsp Seasoning of your choice (I used a zesty blend)
  • tsp Salt
  • ½ tsp Black Pepper
  • ½ tsp White Sesame Seeds
  • ½ tsp Ground Ginger (Optional)
  • ½ tsp Ground Turmeric (Optional)

Instructions

  • Add wet ingredients and mix thoroughly.
  • Add dry ingredients and mix until no lumps.
  • Add meat of choice. (I used pork loin sliced thinly)
  • Cover and marinate overnight or longer for more flavor.

Mom's Meatloaf Recipe

Servings: 2 Pounds

Ingredients

Loaf:

  • 2 Pounds Ground Meat (I used Beef)
  • 2 Large Eggs
  • 2 Cloves Garlic Minced
  • 2 Tbsp Chopped Onion (Can use dehydrated onion)
  • 1 Tbsp Mustard Dijon or Stone Ground
  • 1 Tbsp Tomato Paste
  • 1 Tbsp Seasoning (I used garlic and herb)
  • 1 tsp Salt
  • 1 tsp Ground Pepper
  • 1 packet Onion Soup Mix (Or make your own mix)
  • 1 4 Oz Can Sliced Mushrooms (Optional)
  • 1 tsp Turmeric (Optional)

Sauce Toppping

  • ½ Cup Ketchup
  • 2 Tbsp Brown Sugar
  • 2 Tbsp Worcestershire Sauce

Instructions

For Loaf: Pre-heat oven to 400°

  • Mix all ingredients well and form into a loaf.
  • Put in greased baking dish with higher sides.

Sauce Topping:

  • Put all ingredients into a saucepan and simmer until sugar is melted. (2-3 Minutes)

Instructions:

  • Pour 1/2 of sauce over loaf and spread.
  • Bake at 400° for 30 minutes.
  • Remove from oven and pour rest of sauce over loaf and spread.
  • Bake another 40 minutes or until internal temperature reaches 160°-165°
  • Remove from oven and let rest 5 minutes before slicing and serve.

Homemade Hummus (Tahini Free)

Ingredients

  • 1 Can Strained Garbanzo Beans (Save Liquid to the side)
  • 1 Clove Garlic, finely minced
  • 2 Tbsp Lemon Juice
  • 2 Tbsp Olive Oil
  • ¼ tsp Salt
  • 1 tsp Cumin
  • 2 Tbsp Strained Garbanzo Bean Liquid
  • tsp Paprika (Optional for looks)

Instructions

  • Strain garbanzo beans into separate container and save liquid aside.
  • Add all ingredients to food processor.
  • Blend for 3-4 minutes, checking if you need to scrape down the sides.
  • Check consistency.
  • Pulse further if you wish it smoother.
  • Seal in air tight container and store in fridge up to 2 weeks.
